Sunshine Rice
This is not your boring rice recipe – a splash of citrus combined with almonds makes this dish a new classic. Try it with fish.
- 1 Tbsp olive oil or canola oil
- 1 ¼ C celery, finely chopped
- 1 ½ C onion, finely chopped
- 2 C water
- ½ C orange juice
- 2 Tbsp lemon juice
- dash hot sauce
- 1 C brown rice, uncooked, rinsed and drained
- ¼ C slivered almonds
- Heat oil in medium saucepan. Add celery and onions and sauté until tender (about 10 minutes).
- Add water, juice, and hot sauce. Bring to boil. Stir in rice and bring back to boil. Turn heat to low, cover and cook about 45 minutes or until rice is tender and liquid is absorbed.
- While rice is cooking, brown almonds in dry skillet over medium heat, stirring often.
- Add almonds to rice and serve immediately.
