Spanish Style Beef Stew
This slow cooked stew is big on flavor but low on fat and sodium.

2 lb. sirloin roast, or other lean beef roast, trimmed of fat

2 Tbsp. flour

6 cups water

1 medium onion chopped

2 medium potatoes cut into chunks

1 8oz can tomato sauce, no salt added

¼ cup sofrito, store bought or homemade

1 envelope sazon seasoning packet

2 tsp pepper
-
2 tsp garlic powder
-
½ tsp salt
-
1 tbsp olive or canola oil
-
½ lb carrots cut into chunks

½ lb green beans

Cube beef and coat with mixture of pepper, garlic powder and salt. Allow beef to season for several hours or overnight.

Sprinkle flour over beef and toss to coat.

Heat oil in a large pot or Dutch oven and sear beef until lightly browned. Add water and simmer on medium heat until beef is tender, about 30-40 minutes.

Add sofrito, tomato sauce, and sazon, and simmer for five minutes. Add onion, carrots, green beans and potatoes. Cook until vegetables are tender, about 60-90 minutes.

Garnish individual servings with chopped fresh cilantro, if desired.

Serve over brown rice
