Peanut Butter Muffins
1 ½ cups Nabisco 100% Bran
1 ¼ cups skim milk
1/3 cup chunky peanut butter
1 cup all-purpose flour
1/3 cup firmly packed light brown sugar
1 tablespoon baking powder
¼ cup margarine, melted
¼ cup Egg Beaters 99% Real Egg Product
¼ cup strawberry preserves
In medium bowl, combine bran and milk; let stand 5 minutes. Blend in peanut butter.
In large bowl, combine flour, brown sugar and baking powder; stir in bran mixture, margarine and Egg Beaters just until blended. Fill 12 greased 2 ½ inch muffin-pan cups with half the batter. Spoon 1 teaspoon preserves on batter in center of each cup. Top each with remaining batter.
Bake at 400º for 20 to 25 minutes. Remove from pan; cool slightly. Serve warm.
