Lemon Basil Grilled Chicken
½ cup Puritan Oil
¼ cup lemon juice
2 Tablespoons white wine vinegar
1 Tablespoon dried basil leaves
1 teaspoon grated lemon peel
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon freshly ground pepper
4 boneless, skinless chicken breast halves (about 1 lb.)
Combine Puritan Oil and next 7 ingredients in shallow baking dish.
Add chicken, turning once to coat both sides.
Refrigerate for 30 to 45 minutes, turning once.
Prepare charcoal for grilling, or heat broiler. Grill or broil chicken 4 inches from heat, turning once, 3 to 5 minutes
per side or until just cooked through.
TO MICROWAVE:
Follow step 1, above.
Place in microwave-safe dish in single layer. Cover with plastic wrap. Microwave on high 2 minutes. Turn dish.
Microwave on high 2 minutes. Let stand, covered, one minute.
