On the Lighter Side: Orange Sugar Cookies

Orange Sugar Cookies (Heart Healthy)

 

Ingredients:

2 C. all-purpose flour

11/2 tsp. baking soda

1/2 C.  margarine, softened

1 C. sugar

2 tsp. grated orange peel

1 tsp. vanilla extract

1/4 C. egg substitute

Water

Directions:

 

  • Combine flour and baking soda; set aside.
  • In bowl, with electric mixer at medium speed, beat margarine, 3/4 cup sugar, orange peel and vanilla until creamy.
  • Add egg subsititute; beat one minute.
  • Gradually stir in flour mixture until blended. Chill dough one hour.
  • Shape dough into 42 (3/4 inch) balls; roll in remaining sugar. Place, two inches apart, on lightly greased baking sheets. Flatten with bottom of glass; sprinkle lightly with water.
  • Bake at 375º for 8 to 10 minutes or until light brown. Cool on wire rack.

 

Makes 31/2 dozen cookies
