Chicken Stir Fry
Chicken Stir Fry
    1 Tbsp. Canola or olive oil
    1 ½ lbs. of cubed skinless and boneless chicken breasts
    1 small bunch of broccoli chopped
    ½ bunch cauliflower chopped
    2 diced or sliced carrots
    1 medium onion diced
    1 small red pepper diced
    1 cup diced mushrooms
    1 ½ cups cooked rice

Use wok or stainless steel pan. Place wok or pan on high heat. Add oil when pan is placed on heat.

Place chicken on pan. Cook until chicken is white, stirring often. Add onions and peppers. Continue to stir for 1 to 2 minutes. Add carrots, cauliflower and broccoli. Continue on high heat. Immediately add ½ cup water, push ingredients to sides of wok or pan and cover for 3 to 5 minutes. Stir in mushrooms and cover for one minute. Stir and serve over cooked rice.

Serves: 4 large servings
